Black Bean & Corn Enchiladas with Roasted Tomatillo Sauce (Vegan)

I have been choosing the vegan route as of lately and can't express how much better I feel physically. Here, I will show you how to make tasty blunt-rolled like enchiladas with Bae's Secret Homemade Roasted Tomatillo Sauce. Screw (with love) the pre-made green sauce and let's make it from scratch! (Thanks to chef bae) I got the secret recipe to make the most lit green roasted tomatillo sauce to share with you all! Though you can eat it with your vegan enchiladas, you can even use it as a salsa dip for your nachos, tacos, quesadillas, and more!

Ingredients
- 1 lbs of vegan ground beef
- 1 can of black beans
- Flour tortillas or corn tortillas (Totally up to you)
- 2 Corn in a cob or 1 can of corn (Again, totally up to you)
- Olive oil
- Chopped cilantro
Bae's Roasted Tomatillo Sauce:
- 1½ lbs tomatillos
- 1 jalapeno
- 1 onion
- 6 cloves of garlic
- Salt & Peppa
- Fresh cilantro
Prep:
1. Preheat your oven to 600 degrees - Broil mode bruh
2. Peel off all of the tomatillo leaf skins & cut off the stems
3. Chop the half onion into 1/3 cubes
4. Chop cilantro for garnish
5. Coat your tray in olive oil
6. Salt & Pepper your corn in a cob
(If you have a can, you can skip this step)
7. Roast your vegetables for 25 minutes in 600 degrees broil mode
8. Let it chill for a few minutes then blend it all together with salt and pepper for taste
9. Shave your corn
Directions:
1. Sauté your vegan ground beef in olive oil
2. Season it with salt, peppa & garlic powder
3. Mix it in with your black beans & corn (Please strain out the bean liquids from the can)
4. Get your tray and coat it with your awesome roasted tomatillo sauce
5. Begin rolling up your tortilla with the vegan beef, beans, and corn mix and cheese like a blunt
6. Continue as so with the rest of your ingredients
7. Pour and spread the rest of your roasted tomatillo sauce on top of your enchiladas
8. Sprinkle your shredded almond cheese on top
9. Bake for 15 minutes in 350 degrees heat.
VOILA! You have yourself some tasty vegan enchiladas! the majority of the masses probably have this notion that vegan food can't be delicious. I'm not going to lie, I used to be one that had that same notion until I became more conscious of what I was putting into my body and educating myself via documentaries and Instagram blogs. I'm not a hardcore 100% vegan. But I am on the path to a much more conscious lifestyle. And I will totally share to everyone all that I know and love so much!
