How to make Crispy Battered Cauliflower Tacos (Vegan)

Cauliflower Taco, Potato Tacos + Refried Black Beans

Happy belated National Taco Day! I literally found out it was National Taco Day on National Taco day lol. It was perfect timing because I was already craving tacos. (NOTE: I crave tacos every week, it's crazy. And if it ain't tacos, it's nachos or fried chicken and waffles). So, why not make some lit ass tacos, take a cute ass picture of it and blog on how to make this perfectly crisped and zesty limed orgy in your mouth for all my soul amigos to have a taste. This is what you'll be needing:

Time: 30 minutes <

Ingredients:

  • 1 cauliflower

  • 1 avocado

  • flour tortillas

  • salt

  • vegan tartar sauce

  • refried beans

  • vegan sour cream

Batter Ingredients:

  • 1 1/2 cups beer (or substitute seltzer water)

  • 1 cup flour

  • 1 tbsp cornstarch

  • 1 tsp salt

  • 3/4 tsp garlic powder

  • 1/4 tsp cayenne pepper

  • 1 1/4 cups panko breadcrumbs

The batter I created is called Tori's Crispy Panko Coating. And must I say, I never knew what a difference it can taste once you have the best batter coated on your cauliflower.

Sweet n’ Sour Slaw:

  • 1 cup of shredded carrots

  • 1 cup of shredded cabbage

  • 1 squeezed lime (calamansi works too)

  • 3 tbsp of white vinegar

  • 4 tbsp of maple syrup

Prep:

1. Chop up your cauliflower and chop off the stems

2. Shred your carrots and cabbage

3. Create bae's sweet n' sour slaw

3. Create Tori's bomb ass batter and make sure you leave the panko breadcrumbs in a separate bowl where you will be dipping the battered cauliflower into the panko breadcrumbs

4. Cook your refried beans in a pot

Directions:

1. Get your fryer hot at 350 degrees

2. Dip your batter coated cauliflowers into the fryer until it is golden crisped

3. Remove from fryer and sprinkle some salt

4. Warm up that tortilla on a pan

5. Use a spoon of tartar sauce and spread it all over the tortilla

6. Add your tasty ass crispy cauliflowers on one side of the tortilla (so that you can fold it)

7. Add your sweet n' sour slaw

8. Add your sliced avocados

9. Add a blop of your cooked refried beans on the side

I hope you like the lit ass cauliflower tacos! My bf and I were inspired to make some after eating at a vegan spot in Arizona. We were doing the 7-day vegan challenge at the time and holy moly macaroni! (I don't even say that in real life. I was just trying not to say holy sh*t lol!) Those tacos were on point! I'm definitely not a vegan. But I do hope that I will soon transition into a vegan. For now, I am a part-time vegetarian! Lol. That means that I only eat meat once a week lol! I don't eat red meat anymore though. Only fried chicken and shrimp. It's so hard being a vegan! Especially because I love cheese so much. It's hard to unlove it, you know? And not to mention, so many foods contain egg, milk and cheese, it's hard to not eat it. But you know what, cheers to my future veganism! I will be vegan, one day!
